Red Beet Pasta
- 500g spaghetti
- 4 medium-sized red beets
- 2 whole garlic cloves, peeled
- 4tbsp olive oil
- 50ml whipped cream
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- fresh parsley
First, wash the beets, remove the tops and the roots and broil them for about 45 minutes. After that, with a vegetable peeler, peel the beets and cut them in small pieces.
In a food processors, combine beets, garlic, salt, pepper, some olive oil, and whipped cream. Blend for 20-25 seconds.
Prepare the spaghetti al dente ( according to package instructions).
Drain and return to skillet. Pour the sauce over the pasta and mix together. Serve pasta garnished with a sprinkle with black pepper.
In the center of the plate put some fresh parsley leaves.
